Ingredients

  • 1 large ripe pineapple
  • 75g caster sugar
  • juice and zest of 2 limes
  • 6 scoops vanilla ice cream, to serve

Step by step

Get ahead
Make the syrup up to a day ahead.
  1. Peel the pineapple, cut it in half lengthways, then cut each half into 6 slices. Trim away the tough core.
  2. Place the sugar and lime juice and zest in a small pan and heat gently until the sugar dissolves. Bubble for 2-3 minutes until syrupy.
  3. Brush a little of the syrup over the pineapple, then, using tongs, place on the barbecue and griddle until charred, turning halfway. Serve drizzled with the remaining syrup and with a scoop of vanilla ice cream.
