Ingredients
- 1 pink (or red) grapefruit (or 150ml juice)
- 100g caster or granulated sugar
- 150ml Campari
- 1 x 75cl bottle Prosecco*, well chilled
Step by step
Get ahead
Make the pink grapefruit syrup up to 2 days ahead and chill.
- Juice the grapefruit. Make a simple syrup by heating the sugar with 100ml water until it boils and turns clear. Remove from the heat and stir in the grapefruit juice. Leave to cool.

Pour 25ml Campari into each Champagne glass, add 25ml of grapefruit syrup, and stir. Top up with cold Prosecco, and serve.Tip*If you are vegan, check the Prosecco label for dietary suitability – most types of Prosecco are vegan.
