- 150g white sugar
- 10 cherries with stalks
- 150ml cherry syrup from 1 x 425g tin black cherries
- 300ml Amaretto
- 1ltr soda water, to serve
Step by step
Get ahead
Make the toffee cherries up to 1 hour ahead.
- Heat the sugar with 4 tablespoons water in a heavy-based saucepan. When it's dissolved, increase the heat and bubble until golden, then remove from the heat. Dip the cherries into the caramel and leave to cool on baking paper.
- Mix the syrup and Amaretto together in a jug. Half-fill 10 glasses with ice and divide the cocktail between them. Top up each glass with 50ml soda water and garnish with a toffee cherry.
