Ingredients
- 3 sprigs of mint
- ½ lime, in 4 wedges
- 2 tsp demerara sugar
- 50ml white rum
- soda water, to top up
Step by step
- Pick the mint leaves off the stalks, reserving the top of one sprig to garnish. Add the leaves to the bottom of a tall glass, squeeze in 2 lime wedges, and add them in, along with the sugar. Give everything a good bash with a cocktail muddler or the base of a rolling pin to mix together.
- Add the rum, remaining lime wedges, and a large handful of ice, and stir. Top up with soda water and garnish with the mint sprig.
