Ingredients
- 90g quinoa
- 100g frozen peas
- 1½ tbsp lemon juice
- 3 tbsp walnut or hazelnut oil
- 50g watercress, coarsely chopped
- 100g seedless red grapes, halved
- 1 spring onion, trimmed and finely sliced
- 60g feta, coarsely crumbled or 60g halloumi, cut into slices and griddled
Step by step
- Bring a pan of salted water to the boil, add the quinoa and simmer for about 15 minutes or until tender, adding the peas for the last 2-3 minutes. Drain and rinse in cold water, then leave to cool completely.
- Whisk the lemon juice, oil and some seasoning together. Combine the watercress in a bowl with the grapes, spring onion and quinoa mixture. Shortly before serving, toss with the dressing, then gently mix in the feta or halloumi.
