Ingredients
- 2 tbsp vegetable oil
- 2 x 240g packs Taste the Difference aromatic stir-fry mix
- 4 tbsp sweet chilli sauce
- 4 tbsp lime juice (about 2 limes)
- 2 tsp fish sauce
- 2 tsp ready-made garlic and ginger paste
- 2 x 180g packs peeled raw king prawns
- 2 x 250g packs steamed rice
Step by step
- Heat 1 tablespoon of vegetable oil in a wok or frying pan over a medium heat and add the harder parts of the stir-fry mix, keeping the softer leafy greens aside. Stir-fry for 5 minutes.
- Meanwhile in a small wide frying pan, mix together the remaining oil with the sweet chilli sauce, lime juice, fish sauce and garlic and ginger paste. Cook over a high heat for a few minutes until reduced, sticky and bubbling.
- Add the prawns and the leafy parts of the stir-fry mix to the wok with the veg and cook for 2-3 minutes. Cook the rice per pack instructions.
- Serve the vegetables and prawns over steamed rice and drizzle the sticky sauce over each dish.

To make it veggie, omit the prawns and add chopped firm or marinated tofu
