Ingredients
- 2 medium sweet potatoes
- 2 baking potatoes
- a glug of olive oil
- 2 tsp Cajun-style spice rub
Step by step
- Slice the (unpeeled) sweet and baking potatoes into 8 wedges each. Parboil the wedges for 5 minutes then drain in a colander and allow to steam dry in the colander. Put a good glug of oil into a large bowl and mix in the Cajun spice mix. Add the parboiled wedges and toss in the spicy oil until well coated.
- Light a barbecue or preheat a griddle pan to medium hot. Barbecue or griddle the wedges for about 10 minutes, turning and basting now and again with any spiced oil left in the bowl, until golden and tender.
