Crab? In a £1 meal? It's a little-known secret that you can now get the most amazing tinned crab in supermarkets. Here it's used to create a decadent twist on an already rich cheddar mac and cheese

Ingredients

  • 100g macaroni
  • ½ onion, finely chopped
  • a splash of olive oil (about ½ tbsp)
  • 1 garlic clove, crushed
  • a pinch of crushed dried chilli flakes
  • a squirt of English mustard (about ½ tsp)
  • 1 tsp butter
  • 1 tsp plain flour
  • 100ml milk
  • a handful of grated mature cheddar cheese (about 50-60g)
  • 1 tbsp tinned crab (we used tinned dressed crab from a 43g can)

Step by step

  1. Preheat your oven to 190°C, fan 170°C, gas 5. Bring a pan of salted water to the boil and cook the macaroni according to the pack instructions until al dente. Drain well.
  2. Meanwhile, in a saucepan, gently fry the onion over a medium heat in a splash of olive oil. After a few minutes when it starts to go translucent, add the garlic and continue to fry until the garlic starts to brown. Then add the dried chilli flakes and mustard, stir and then add the butter. As soon as the butter melts, add the flour and stir until the flour has disappeared. At this point add the milk very slowly, bit by bit, while continuing to stir. Once you have a thickened sauce, remove from the heat and stir the cheese into the sauce, taste and season if required.
  3. Next, add the crab and drained macaroni to the sauce, stir and transfer to a small ovenproof dish, about 600ml capacity.
  4. Bake for 30 minutes until bubbling and golden and enjoy on a cold winter's day!
