Ingredients
- 1 onion, finely chopped
- 1 tbsp olive oil
- 200g Clonakilty Blackpudding, sliced into 2cm rounds
- 500g passata
- 1 tsp paprika
- pinch chilli flakes, optional
- 4 medium eggs
- handful of feta, crumbled
- handful of coriander, roughly chopped
- 1 400g tin black beans, drained, rinsed and warmed through
Step by step
- Sauté the onion in a large frying pan with the olive oil for 6-8 minutes over a medium-low heat.
- Add the Clonakilty Blackpudding and cook for 2 minutes on each side.
- Add the passata and season well with sea salt, black pepper, paprika and chilli flakes, if you wish. Simmer for 5 minutes.
- Make four wells in the sauce with a spoon and break an egg into each.
- Let the eggs cook in the sauce for 15 minutes or until just cooked.
- Garnish with feta and coriander and serve with warm black beans.
