Ingredients

  • 1 onion, finely chopped
  • 1 tbsp olive oil
  • 200g Clonakilty Blackpudding, sliced into 2cm rounds
  • 500g passata
  • 1 tsp paprika
  • pinch chilli flakes, optional
  • 4 medium eggs
  • handful of feta, crumbled
  • handful of coriander, roughly chopped
  • 1 400g tin black beans, drained, rinsed and warmed through

Step by step

  1. Sauté the onion in a large frying pan with the olive oil for 6-8 minutes over a medium-low heat.
  2. Add the Clonakilty Blackpudding and cook for 2 minutes on each side.
  3. Add the passata and season well with sea salt, black pepper, paprika and chilli flakes, if you wish. Simmer for 5 minutes.
  4. Make four wells in the sauce with a spoon and break an egg into each.
  5. Let the eggs cook in the sauce for 15 minutes or until just cooked.
  6. Garnish with feta and coriander and serve with warm black beans.
