Ingredients
- 400g cooked lobster meat
- 4 tbsp mayonnaise
- 1 celery stick, finely diced
- a handful of fresh dill or chives (or 1 spring onion), finely chopped, plus extra to garnish
- 4 white or brioche hot dog buns, split
- about 60g soft butter
- crisp lettuce leaves, such as Romaine, Cos or Sweet Gem or leaf lettuce
- French fries, to serve
- lemon wedges, to serve
Step by step
- Preheat the grill.
- Chop the lobster meat into medium-to-large pieces. Place in a mixing bowl with the mayonnaise, celery and chopped herbs or spring onion. Toss to coat; you want just enough mayonnaise to hold the lobster mixture together. Season to taste with salt and pepper. Lightly toast the buns inside and out under the grill, then butter them.
- Line the buns with lettuce, either full leaf or chopped, depending on your preference. Fill with the lobster mixture, garnish with extra herbs, and serve while the bun is still warm. Serve with French fries, and lemon wedges to squeeze over the lobster rolls.
