Ingredients
- 2 courgettes (ideally 1 green, 1 yellow), sliced into 1cm discs
- 1 red onion, cut into chunky wedges
- 3 mixed peppers, cut into chunks
- 6 spring onions, cut into 5cm lengths
- 6 baby corn, cut into 5cm lengths
- ½ pineapple, skin removed, cut into 3cm chunks
- 2 tbsp Lee Kum Kee Pure Sesame Oil
- sliced red chilli, to serve
For the glaze
- 2 garlic cloves, crushed
- 1 tbsp grated root ginger
- 2 tsp mixed black and white sesame seeds, plus extra to serve
- 3 tbsp Lee Kum Kee Premium Oyster Sauce
- 1 tbsp caster sugar
- juice of ½ a lemon
Step by step
- Mix all the ingredients for the glaze together in a small bowl.
- Thread the vegetables and pineapple onto 8 metal skewers; if using wooden, be sure to soak them in water for 30 minutes before using, to prevent burning.
- Preheat a griddle pan (or the grill) and brush the vegetable skewers with the Lee Kum Kee Pure Sesame Oil. Griddle or grill for about 5 minutes, turning regularly, until starting to colour. Brush with half of the glaze and cook until slightly caramelised. Pour the rest of the glaze into a small bowl.
- Transfer the vegetable skewers to a platter and serve with the rest of the glaze to drizzle over. Sprinkle with sliced red chilli and extra sesame seeds to serve.
