Ingredients

  • 400g cook’s white chocolate, finely chopped
  • 50g salted butter, diced
  • 6 x 21g bags mini Fox's Party Rings
  • 75g rich tea biscuits
  • 100g mini pink and white marshmallows

Step by step

Get ahead
Keeps for 4-5 days in an airtight container in the fridge.
  1. Line a 20cm square tin with baking paper.
  2. Tip the chopped chocolate and butter into a heatproof bowl and place over a pan of very gently simmering water. Make sure the base of the bowl doesn’t come into contact with the water. Allow the chocolate to melt, stirring occasionally; this will take about 5 minutes.
    Tip
Be careful to melt the chocolate very gently. If it starts to seize, add a dash of warm milk.
  3. Roughly break up 4 packs-worth of party rings and all the rich tea biscuits, setting aside the remainder of the party rings for decoration. Stir the broken biscuits into the chocolate, along with most of the marshmallows (keep a handful or two for the top), until all the ingredients are coated in chocolate.
  4. Scrape into the prepared tin and pack down with the back of a spoon. Scatter over the remaining party rings and marshmallows, cover and chill for a minimum of 2 hours, until set. Cut with a hot knife to serve.
