Ingredients

  • 1 tsp caster sugar
  • 1⁄2 tsp light brown sugar
  • 1⁄2 tsp mixed spice
  • a lemon wedge
  • 1 tsp sugar syrup
  • 1⁄2 tsp vanilla bean paste
  • 100ml cloudy apple juice
  • 45ml gin
  • ice
  • a splash of sparkling water

Step by step

  1. Combine 1 teaspoon caster sugar, 1⁄2 teaspoon light brown sugar and 1⁄2 teaspoon mixed spice on a small, flat plate. Rub the rim of a short glass with a lemon wedge, then dip the glass into the spiced sugar, shaking off any excess. Combine 1 teaspoon sugar syrup and 1⁄2 teaspoon vanilla bean paste at the bottom of the glass, and stir in 100ml cloudy apple juice and 45ml gin. Add ice and top with a splash of sparkling water.
