Ingredients

  • 5 medium Bramley apples (about 900g), peeled, cored and diced
  • 100g fresh or frozen cranberries
  • 60g caster sugar
  • 1 tsp ground mixed spice
  • ½ tsp ground cloves
For the crumble topping
  • 150g brandy butter
  • 200g plain flour
  • 50g demerara sugar

Step by step

Get ahead
Make the fruit filling several hours ahead.
  1. Preheat the oven to 190°C, fan 170°C, gas 5.
  2. Put the apples in a large saucepan with the cranberries, caster sugar, ground mixed spice and ground cloves, plus 100ml water. Cover and cook for 5 minutes or until the apples start to soften, then tip into a baking dish and leave to cool.
  3. Make the crumble by rubbing the brandy butter into the plain flour, then stir in the demerara sugar. Scatter over the fruit and bake in the oven for 40-45 mins.
