Ingredients
- 2 tbsp dark soy sauce
- 2 tbsp dry sherry (or Shaoxing cooking wine, or apple juice)
- 3 tbsp oyster sauce
- 1 tsp caster sugar
- 1 tsp sesame oil
- 2 tsp cornflour
- 2 tbsp sunflower oil
- 300g minced beef (12% fat)
- 2 garlic cloves, finely sliced
- 2.5cm piece root ginger, peeled and shredded
- 1 x 600g pack sweet & crunchy stir fry veg or other stir fry pack
- 1 x 410g pack fresh egg noodles
Step by step
- Mix the soy sauce, sherry, oyster sauce, caster sugar, sesame oil and cornflour together in a small bowl and set aside.
- Heat the oil in a large, deep, nonstick frying pan or wok over a high heat. Add the minced beef, garlic and ginger and stir-fry for 4-5 minutes, breaking up the meat into small pieces as it cooks, until it starts to crisp up. Add the veg and stir-fry for 2-3 minutes, then add the noodles and stir-fry for another minute.
- Add the sauce mixture and toss everything together over a high heat for 1 minute or until piping hot. Spoon the chow mein into warmed bowls and serve.
