Caramelised honey, za'atar and cheese toastie

The perfect “girl dinner” for me is quick, cheesy and undeniably crispy. This toastie checks all those boxes. My secret is caramelising the honey for that irresistible sweet-savoury crunch

Ingredients

  • 25g mature cheddar cheese
  • 25g Gruyère cheese, Comté cheese or more cheddar*
  • 2 tbsp butter, softened
  • 2 slices of sourdough bread
  • 2 tbsp clear honey
  • 1 tbsp za’atar, plus extra to sprinkle
  • sea salt flakes, to serve
  • pickled chillies, to serve

Step by step

  1. Grate both cheeses and combine in a bowl. Spread the butter liberally on both sides of the bread and stuff the grated cheese between them, reserving about 1 tablespoon of cheese.
  2. Put a frying pan on a low heat and add the toastie. Cook very gently for 8-10 minutes, turning the toastie over halfway through, until the cheese is bubbling and hot, and the outside is golden and crisp. If needed, add a splash of water and put the lid on to help the cheese melt.
  3. Remove the toastie from the pan, sprinkle half the reserved cheese directly on the pan and immediately put the toastie on top – the cheese will melt and caramelise on the bread. Repeat on the other side. Take the toastie out of the pan and turn the heat off.
  4. Add the honey and za’atar to the hot pan and allow them to bubble. Put the toastie back into the pan and swirl it around in the honey, turning the toastie over. Remove from the pan and sprinkle with extra za’atar and the sea salt flakes. Cut the toastie into two and enjoy hot, with a pickled chilli.

    *Use vegetarian cheese, if required.
