Ingredients
- 2 skinless chicken breasts
- ½ tbsp olive oil
- 8 sunsoaked or 4 sundried tomatoes, snipped
- ¼ x 28g pack basil, leaves picked
- 75g ready-grated mozzarella
Step by step

Heat the grill to high. Cut into the chicken breasts horizontally, but not all the way through, and open them out like a book so they’re about 1cm thick. Rub all over with the olive oil and season well. Pop on a baking tray or in a heatproof baking dish and grill for 5-6 minutes on each side, until golden brown and cooked through.

Scatter the tomatoes and basil leaves over each chicken breast, then pile the mozzarella on top. Grill again for 1-2 minutes until the cheese has melted and is bubbling. Serve with rocket salad, if you like. This is also delicious with new potatoes or crusty bread.
