Ingredients
- 2 pieces cod loin fillet, about 150g each
- 4 slices Prosciutto di Parma
- 2 tbsp unsalted butter
- 400g new potatoes, scrubbed and cut into 5mm discs
- 300g frozen peas
- 100ml double cream
- 2 tsp wholegrain mustard
Step by step
- Preheat the oven to 180°C, fan 160°C, gas 4. Season the cod with freshly ground black pepper and wrap each piece in 2 slices of Prosciutto di Parma. Heat 1 tablespoon of butter in a frying pan and sear the wrapped cod until golden, about 2 minutes on each side. Transfer to a baking tray.
- Add the sliced potatoes to the same frying pan you used to sear the cod, cover and cook on a medium heat (stirring occasionally) until tender and golden – this will take 10-15 minutes.
- Bake the cod in the oven for 8-10 minutes or until the fish flakes easily.
- Meanwhile, boil the peas in lightly salted water for 4 minutes. Drain and return to the pan along with the cream and 1 tablespoon of butter. Use a stick blender to blend the mixture to a coarse purée and season to taste.
- Serve the cod on the potatoes with the pea purée to the side, topped with a spoonful of mustard.
