Ingredients

  • 2 tbsp olive oil, plus 2 tsp extra
  • 320g pack chicken breast mini fillets
  • 1 bagel*, cut into bite-size pieces
  • juice of 1⁄2 a lemon
  • 1⁄2 tsp English mustard
  • 100g salad leaves
  • 150g cherry tomatoes, halved
  • 1⁄2 small red onion, finely sliced
For ‘everything seasoning’
  • 2 tbsp sesame seeds
  • 1 tbsp poppy seeds
  • 2 tsp garlic granules
  • 11⁄2 tsp fine sea salt

Step by step

  1. Preheat the oven to 200°C, fan 180°C, gas 6. Prepare two baking trays, greasing one with 1 teaspoon of the oil.
  2. Put the ‘everything seasoning’ ingredients in a lidded jar and shake to combine. Add the chicken to a bowl with 1 teaspoon of oil and most of the seasoning mix, tossing to coat, then transfer to the greased tray. Toss the bagel pieces with 1 tablespoon of the oil on the other tray; season with salt. Bake the chicken for 20 minutes (turning halfway) and the bagel bites for 10-12 minutes until crisp and golden.
  3. Meanwhile, whisk the last tablespoon of oil with the lemon juice and mustard in a large bowl, seasoning lightly. Add the salad leaves, tomatoes and onion, tossing to coat. Divide between serving bowls, scatter over the bagel bites and the rest of the seasoning mix, then serve with the chicken.
