Ingredients
- 120g plain flour, plus 2 tsp extra
- 2 medium eggs
- 170ml semi- skimmed milk
- 3 tsp olive oil
- 4 pork sausages
- 10g fresh herbs, finely chopped (we used a mixture of parsley, basil and chives)
- 1 small red onion, finely sliced
- 250ml chicken stock (made with ½ stock cube)
- 1 tbsp balsamic vinegar
- a few splashes of Worcestershire sauce
- steamed vegetables, to serve
Step by step
- Whisk together the flour, eggs and milk in a jug or bowl and season well. Set aside to rest.
- Drizzle 2 teaspoons of the oil into a deep 18cm round baking dish, or 1 teaspoon each into 2 smaller rectangular baking dishes if your air fryer is big enough. Transfer to your air fryer, fitted with a crisper tray if you have one, and preheat to 200°C. Once heated, carefully add the sausages (2 in each dish, if using 2), rolling in the oil. Air-fry for 5 minutes. Whisk the herbs into the batter, open the air fryer and carefully pour the batter around the sausages. Air-fry for 15 minutes – do not open the air fryer during this time – until puffed and golden.
- Meanwhile, heat the remaining oil in a small pan over a medium heat. Add the onion and cook for 6-8 minutes, until softened and starting to turn golden. Sprinkle over the extra flour and continue to cook for another 30 seconds until the flour has disappeared, then stir in the stock and vinegar. Bring to the boil, reduce the heat to low and simmer for 5 minutes. Add the Worcestershire sauce, remove from the heat and season with black pepper. Serve the toad-in-the-hole with the gravy and steamed veg of your choice.
