Ingredients

  • 1 tbsp olive oil
  • 1 onion, chopped
  • 2 tsp Schwartz Garlic Granules
  • 150ml white wine
  • 1 x 400g tin chopped tomatoes
  • 200ml chicken stock
  • 50g green olives, pitted
  • a pinch of Schwartz Saffron
  • 2 tbsp Schwartz Paprika
  • ½ tsp Schwartz Chillies Crushed
  • 1 red pepper, deseeded and chopped
  • 2 tsp sugar
  • 1 tsp Schwartz Basil
  • 1 x 450g cod fillet, skin on is best
  • Schwartz Flat Leaf Parsley to garnish
  • Schwartz Flat Leaf Parsley to garnish

Step by step

  1. Heat the olive oil in a large pan. Add the onion and garlic granules and fry for 3–4 minutes or until softened.
     
  2. Add the wine, simmer for 1 minute then add the remaining ingredients, reserving the fish; season to taste. Heat through until the sauce begins to simmer. Continue to simmer to thicken the sauce if desired.
  3. Add the fish to the pan; cover and simmer for 5 minutes or until the fish is opaque and cooked through.
     
  4. Garnish with parsley to serve.
