Ingredients
- 1 tbsp olive oil
- 1 onion, chopped
- 2 tsp Schwartz Garlic Granules
- 150ml white wine
- 1 x 400g tin chopped tomatoes
- 200ml chicken stock
- 50g green olives, pitted
- a pinch of Schwartz Saffron
- 2 tbsp Schwartz Paprika
- ½ tsp Schwartz Chillies Crushed
- 1 red pepper, deseeded and chopped
- 2 tsp sugar
- 1 tsp Schwartz Basil
- 1 x 450g cod fillet, skin on is best
- Schwartz Flat Leaf Parsley to garnish
- Schwartz Flat Leaf Parsley to garnish
Step by step

Heat the olive oil in a large pan. Add the onion and garlic granules and fry for 3–4 minutes or until softened.
- Add the wine, simmer for 1 minute then add the remaining ingredients, reserving the fish; season to taste. Heat through until the sauce begins to simmer. Continue to simmer to thicken the sauce if desired.

Add the fish to the pan; cover and simmer for 5 minutes or until the fish is opaque and cooked through.

Garnish with parsley to serve.
