Ingredients
- 150g linguine (or any long pasta)
- 1 x 225g rump steak
- 1 tsp olive oil
- 2 tsp cracked black pepper
- 40g Parmesan, finely grated
- a handful of wild rocket to serve
Step by step
- Cook the pasta according to the packet instructions, and drain, reserving a cupful of the pasta water.
- Meanwhile, rub the steak with the teaspoon of oil, 1 teaspoon of the pepper and some salt, and heat a frying pan.
- When the frying pan is very hot, sear the steak for 2-4 minutes on each side until cooked to your liking. Leave to rest on a plate. Turn the pan down to medium low and add a little of the pasta water, whisking it into the steak pan juices.
- Add the drained pasta and sprinkle over most of the Parmesan and the remaining pepper. Leave the cheese to melt into the pasta before tossing everything together. Add a splash more water if needed, to make a glossy sauce that coats everything.

Slice the steak, toss into the pasta with any resting juices and add the rocket and reserved Parmesan to serve.TipMake it veggie:
Omit the steak, replacing it with a couple of chargrilled portobello mushrooms if you like, and serve with a mixed salad rather than just rocket.
