Ingredients

  • 2 large potatoes, chopped into chunks (450g peeled weight)
  • 100ml semi-skimmed milk
  • 20g parmesan, grated
  • 1⁄2 x 400g pack quick cook turkey steaks
  • 2 tsp olive oil
  • 1 green and 1 red pepper, thinly sliced
  • 1⁄2 red onion, finely sliced
  • 1 1⁄2 tsp smoked paprika
  • 1 x 390g carton chopped tomatoes with basil and oregano
  • a handful of fresh parsley, chopped, to serve

Step by step

  1. Bring a large pan of salted water to the boil, add the potatoes, cover and simmer for 10 minutes. Drain the potatoes and briefly steam dry in the pan, before adding the milk and parmesan and mashing together. Season to taste and keep warm.
  2. Meanwhile, rub the turkey steaks with half the oil and season well. Heat a large frying pan or sauté pan and sear the turkey for 1-11⁄2 minutes on each side until lightly golden and just cooked through. Remove from the pan to a plate and add the remaining oil to the pan. Sauté the peppers and onions with a large pinch of salt for 6-8 minutes until softened. Add the paprika and cook for 1 minute then stir in the chopped tomatoes. Swill out the tomato tin with 75ml water, then add this to the pan and simmer for 5 minutes, adding the turkey steaks during the last minute to heat through.
  3. Serve the turkey steaks, mash and sauce garnished with the chopped parsley.
