Ingredients
- 400g peeled 1 potatoes, roughly chopped
- 1 tbsp sunflower oil
- 1 x 240g pack of 2 pork steaks, fat trimmed
- ½ tsp smoked paprika
- 1 medium red onion, thinly sliced
- 1 medium leek, thinly sliced
- 2 rashers smoked lean back bacon (or streaky), finely chopped
- 200g Brussels sprouts, shredded
- 4 tbsp half-fat crème fraîche
- ½ tbsp grain mustard
Step by step
- Cook the potatoes in salted boiling water for 15-20 minutes until tender.
- Once the potatoes are on, heat the oil in a large nonstick frying pan. Season the pork steaks and rub in the smoked paprika. Add the steaks to one side of the pan; and the red onion, leek and bacon to the other side of the pan. Cook on a medium-high heat, stirring the leek mixture from time to time, for about 8 minutes, turning the pork steaks over half way through.
- When the pork is cooked, remove to a plate and keep warm. Turn up the heat under the frying pan and add the shredded sprouts to the onion mixture, plus 2 tablespoons of water. Stir fry for 2-3 minutes or until the sprouts are wilting. Stir in half the crème fraiche and season to taste.
- Meanwhile, drain the potatoes and mash together with the rest of the crème fraîche, the mustard and seasoning. Serve the mash and stir-fried sprouts with the pork steaks.
