Ingredients
- 160g pack The Vegetarian Butcher, What the Cluck
- 1 tbsp olive oil
- 1/4-½ tsp Cajun spice (to taste)
- 250g pack Sainsbury’s golden vegetable rice
- 1 baby cucumber, sliced lengthways
- 1 small avocado, peeled, stoned and sliced
- 1 small carrot, peeled and cut into thin sticks
- ¼ red pepper, deseeded and thinly sliced
For the winter coleslaw
- ½ red onion, peeled and finely sliced
- ¼ small red cabbage, cored, shredded
- 2 tbsp vegan mayonnaise
- ½ raw beetroot, peeled and grated
Rice wine dressing (optional)
- 1 tbsp rice vinegar
- 2 tbsp olive oil
- Chopped red chilli (to taste)
Step by step
- First prepare the coleslaw, Mix all the ingredients together in a bowl. Cover with cling film and chill in the fridge.
- Put the What the Cluck pieces in a bowl with half the olive oil and the Cajun spice and toss well to coat. Heat the remaining oil in a frying pan, add the spiced pieces and cook, stirring moderately, for 5 mins.
- Meanwhile, cook the rice in the microwave according to pack instructions. Serve in bowls with the Cajun-spiced What the Cluck pieces, winter coleslaw and remaining ingredients. If serving with the dressing, mix all the dressing ingredients together and serve alongside.
