Ingredients

  • 250g high-fibre macaroni*
  • 3 gherkins, plus 75ml-100ml of the pickling juice
  • 250g light mayonnaise*
  • 3 spring onions
  • 1⁄2 x 20g pack fresh dill

Step by step

  1. Cook the pasta in salted boiling water until it’s tender but still with a bit of bite to it. Drain and rinse briefly in cold water to remove excess starch, then return to the pan – the pasta should still be warm. Mix in 75ml of the pickling juice from the gherkin jar, followed by the mayonnaise. The dressing will look quite liquid at this point, but will get absorbed by the pasta as it cools.
  2. Finely chop the gherkins, spring onions and dill. Reserve a little of each to garnish then mix the rest into the dressed macaroni. Taste and adjust the seasoning, adding a bit more pickle liquid if needed. Transfer to a serving bowl and scatter with the reserved dill, gherkins and spring onion. Cover until ready to serve.

    *Use gluten-free pasta, and dairy-free mayonnaise, if required.
