Ingredients
- 4 tbsp mayonnaise
- zest and juice of 1 lime
- 1 tbsp vegetable oil
- 1 red onion, thinly sliced
- 400g skinless chicken breast fillets, sliced
- 8 taco shells
- 125g bean sprouts
- 1 garlic clove, crushed
- 4 tbsp Lee Kum Kee Char Siu Sauce
- ½ cucumber, cut into matchsticks
- small handful of parsley or coriander, chopped
- 4 tbsp unsalted roasted peanuts, chopped
Step by step
- Preheat the oven to 180°C, fan 160°C, gas 4.
- Mix the mayonnaise with the lime zest and juice then transfer to a piping bag, if you like.
- Heat the oil in a wok or frying pan and stir-fry the red onion for 3-4 minutes until softened. Remove to a plate or bowl.
- Add the chicken to the wok and stir-fry over medium-high heat for 6 minutes or until golden and cooked through.
- Meanwhile, heat the taco shells as instructed on the box; rinse the bean sprouts with boiling water from the kettle, then drain.
- Add the garlic to the chicken in the wok and cook for a further minute then add the Lee Kum Kee Char Siu Sauce and the red onion. Mix everything together then remove the wok from the heat. Spoon or pipe the mayonnaise into the tacos then fill with the cucumber, bean sprouts and the chicken.
- Garnish with chopped parsley or coriander and the peanuts.
