Ingredients
- 2 tbsp clear honey
- 2 lemons
- large handful of ice
- 100ml gin
Step by step
- Place the honey in a small pan with 1 tablespoon of water. Stir over a low heat until combined. Set aside.
- Use a vegetable peeler to pare 2 decorative strips of zest from 1 of the lemons. Squeeze the juice from the lemons until you have 50ml.
- Fill a cocktail shaker with ice. Pour in the measured lemon juice, honey syrup and gin. Shake vigorously until cold.
- Strain into 2 cocktail glasses and garnish with the lemon zest to serve.
