Ingredients
- 1 tbsp granulated sugar
- a pinch of ground cinnamon
- an apple wedge
- 1 sugar cube (or 1⁄2 tsp sugar)
- a dash of brandy* or Calvados
- 175ml chilled medium cider (we used Inch’s)
- sparkling wine to top up
Step by step
- Mix the granulated sugar with a pinch of ground cinnamon on a small plate. Run an apple wedge around the rim of a glass to moisten, then roll the rim in the cinnamon sugar.
- Add the sugar cube (or 1⁄2 tsp sugar) to the glass with the brandy and leave to soak for a few minutes. Swirl to dissolve then pour in the cider, then top up with the chilled sparkling wine.

Garnish with the apple wedge or thin slices.
*Check your brandy is vegan, if required.
