Ingredients
- 1 tbsp granulated sugar
- 3-4 drops purple food colouring*
- a lime wedge
- ice cubes
- 40ml lime juice
- 60ml white rum
- 20ml blue Curaçao
- 40ml grenadine syrup
- 200ml ginger beer
Step by step
- Add 1 tbsp granulated sugar to a clean jar with 3-4 drops purple food colouring*, screw on the lid and give it a good shake. Mix in any darker clumps then tip it out onto a saucer. Run a lime wedge along the rims of 2 martini glasses then roll in the sugar to coat. Allow to harden then, ideally, leave in the fridge for at least 20 minutes to chill the glasses.
- Add ice cubes, 40ml lime juice, 60ml white rum, 20ml blue Curaçao and 40ml grenadine syrup to a cocktail shaker and shake together for 20 seconds until fully chilled. Add a splash more grenadine if you want a deeper purple hue. Carefully pour into the chilled glasses and top up with ginger beer (about 100ml per glass) before serving. *Check your food colouring is vegetarian, if required.
