Ingredients

  • 300g ripe fresh pineapple chunks
  • 200g root ginger
  • agave syrup or clear honey*
  • 50ml fresh lime juice
  • a handful of ice cubes
  • a pinch of salt
  • 330ml chilled lager*

Step by step

  1. Freeze 300g ripe fresh pineapple chunks until solid. Peel and grate 200g root ginger, place in a clean tea towel and squeeze over a bowl to extract the juice (you’ll need about 90ml). Mix in 4 tablespoons of agave syrup or clear honey* then add to a blender with the frozen pineapple chunks, 50ml fresh lime juice (squeezed from 2-3 limes), a handful of ice cubes and a pinch of salt. Blitz until slushy. Divide 330ml chilled lager* (such as Corona) between 2 tall glasses then slowly pour in the pineapple slush; it will bubble up a little. Garnish with fresh pineapple and serve with a straw.

    *Use a vegan, gluten-free lager, if required, and syrup, not honey, for vegans.
