Watermelon and green tea cooler

Who doesn’t love a cool, refreshing drink on a hot day? Why not amp up its health credentials by using green tea, as well as nutrient-rich fruit? Steeped green tea has a raft of benefits: high in protective plant polyphenols, it’s great for gut health and may improve bone density, protect the brain, and lower blood cholesterol levels.

Ingredients

  • 1 green tea bag
  • 250g watermelon flesh, roughly chopped (seeds picked out)
  • juice of 2 limes
  • 1 tbsp clear honey* or maple syrup
  • 200g raspberries
  • ice cubes
  • a few sprigs of fresh mint, to garnish

Step by step

  1. Put the tea bag in a heatproof jug and add 150ml of just-boiled water. Leave to steep for 3 minutes, then discard the tea bag and set the jug aside until the tea cools completely.
  2. Put the cooled green tea in a blender with the watermelon chunks, lime juice, honey or syrup and raspberries, reserving a few berries for garnish. Add a handful of ice cubes and blend until smooth.
  3. Fill two tumblers with ice then pour over the green tea cooler. Serve garnished with the reserved raspberries and the mint sprigs.
    *Use maple (or agave) syrup, not honey, if vegan.
    Waste not
    Watermelon rind can be used in different ways; peel off the tough green skin, leaving the pale green-white rind. Shred and use to add crunch to stir-fries, or pickle in a spiced vinegar-syrup.
