Ingredients

  • 2 tbsp fennel seeds
  • 4 tbsp coriander seeds
  • 2 tbsp cumin seeds
  • 1 tsp mustard seeds
  • 1⁄2 tsp fenugreek seeds
  • 5 cardamom pods, seeds only
  • 5 cloves
  • 1 tsp black peppercorns
  • 1 tbsp uncooked rice
  • 2 sprigs fresh curry leaves

Step by step

  1. Place a wide-bottom frying pan on a medium heat. Add all the ingredients and dry roast until the mustard seeds start to pop.
  2. Turn off the heat and allow to cool completely. Blend the roasted ingredients to a fine powder in a spice grinder. Transfer to a sealed jar until required.
