Ingredients
- 2 tbsp fennel seeds
- 4 tbsp coriander seeds
- 2 tbsp cumin seeds
- 1 tsp mustard seeds
- 1⁄2 tsp fenugreek seeds
- 5 cardamom pods, seeds only
- 5 cloves
- 1 tsp black peppercorns
- 1 tbsp uncooked rice
- 2 sprigs fresh curry leaves
Step by step
- Place a wide-bottom frying pan on a medium heat. Add all the ingredients and dry roast until the mustard seeds start to pop.
- Turn off the heat and allow to cool completely. Blend the roasted ingredients to a fine powder in a spice grinder. Transfer to a sealed jar until required.
