Ingredients
- 2 cucumbers
- 3tbsp tamari or soy sauce - use tamari if required for gluten-free
- 1½ tbsp honey
- 2 tsp sesame oil
- 2 tbsp toasted sesame seeds
Step by step
- Slice the cucumbers lengthways in half then bash with a rolling pin until the sides split open. Slice diagonally into 2cm thick slices, toss with 2 generous pinches of salt in a bowl and set aside for 20 minutes.
- Whisk together the tamari or soy, honey and sesame oil.
- Drain off any excess liquid from the cucumbers and toss throughthe dressing. Scatter with sesame seeds and serve.
