Ingredients
- 4 slices of sourdough bread
- 1 x 100g pot white and brown crab meat (such as The Good Tide Seafood Co.)
- wild rocket
- 1 x 100g pot white crab meat
- 2-3 tbsp mayonnaise
- 1 tsp wholegrain mustard
- 1 tsp lime juice
- ½ tsp olive oil
- 1 chopped spring onion
- 4-6 drops Tabasco (optional)
Step by step
- Begin by lightly toasting your slices of bread, then let them cool slightly, or leave untoasted if you prefer. Stir the pot of white and brown crab meat to mix these types together, then spread over 2 slices of the toast before tumbling a generous amount of rocket on top.
- Combine the pot of white crab meat with the mayonnaise, wholegrain mustard, lime juice, olive oil, some black pepper and a pinch of salt until fully incorporated.
- Spoon this mixture on top of both beds of rocket and scatter over the spring onion plus a few drops of Tabasco, if using.
- Finally, top with the remaining slices of toast and cut in half.
